Cooking with Mom: Beef Noodles

Greetings from Vancouver!

I decided to go to Vancouver this weekend to spend some time with my family. Vancouver has changed since my visit last year.  I’ve noticed a lot more highrises and construction happening everywhere. There’s a new house being built or listed in almost every block you drive by. I didn’t get a chance to take a stroll down Broadway, but I will be doing that tomorrow and I’m curious to see how much of the street has changed.

We decided to have dinner at home tonight; my mom’s friend had gave us a huge pot of Taiwanese style beef stock and we decided to make noodles together with mom.

Mom just mixed flour and water together, kneaded the dough and let it rest for half an hour.
