Hot and Spicy

Bill and I finally had our first hot pot dinner in London. We ended up finding everything we needed at the Asian market! (Thanks April for the pot!) Before I came to London, I thought we would have to drive to Toronto once a month to get all the Asian ingredients and food at the T&T there, but I don’t think we need to do that. I’m quite relieved that our Asian market is quite complete.

This was our hot pot dinner. There was actually more food that we forgot to bring out. We ended up eating hotpot twice this weekend.

We finally got a garbage can! We got this at Canadian Tire for $15.99. I like using our beautiful garbage can.

Bill decided to make a dish today. He’s been wanting to make 水煮魚. We bought some frozen fish and he marinated it for a couple hours.

I, on the other hand, received a request from my sister to make 葡國雞飯. I marinated the chicken with soy sauce, sugar and rice wine.

Then I coated the potatoes with flour and stir fried them on the frying pan. I didn’t want to cut larger chunks because it was easier for them to cook through this way. The flour will help the sauce thicken up.

I seared the chicken on each side and transferred the potatoes and chicken into the yellow sauce. I wasn’t able to get a good picture of the sauce, but it basically consisted of 1 can of coconut milk, 1/2 can of water and 2.5 tablespoons of tumeric powder (黃姜粉). When you buy the tumeric powder at the grocery store, it’s not going to smell like the finished dish. It’s only after you add it into the coconut that you can recognize the smell.

While the sauce is cooking and thickening, I made some fried rice. easy peasy.

I decided to use Mozzarella because it’s white in color. Seriously.

I baked it in the oven for 15 minutes and then broiled it for another 7-10 minutes to make the top crusty and bubbly.

And this is Bill’s fish dish! It was really spicy but I still liked it.
